Are You Getting Enough Pistachio Nuts In Your Diet?

We have written in the past about how we love to throw a variety of so-called trail mixes together where we combine a random selection of yummy nuts and fruits to munch on when hungry. Strangely I don’t ever recall adding pistachio nuts to the mix at any time. Possibly because we had to de-shell them, or maybe because of the cost of buying them without the shell. Who knows?

Then one day we were invited to a Turkish restaurant and for dessert our hosts ordered a tray of Baklava. Well, if you have never tried this exquisitely sweet and aromatic dessert, you do not know what you are missing! Crunchy pastry filled and topped with pistachio (and other) nuts and covered in delicious sticky syrup. YUM.

Anyway, since that day we determined to start including these tasty nuts in our regular diet and have found that even just a few can make a big difference in the taste of trail mix, desserts, protein balls, salads, and the like. As we always mention however, please don’t try these if you could have any possible reaction to them.

Once we started eating them, we read that they are full of essential vitamins and minerals, are great for the heart, assist as an anti-inflammatory, and are good for your brain, hair and skin. And you can even use their oil as a moisturizer. So why wouldn’t you want to try them?

One of our favourite recipes is a no-bake cookie mix with pistachio nuts, rolled oats, LSA (our go-to substitute for flour), and a selection of dried fruits. Toss it all in the food processor, form it into cookies or balls and pop them into the fridge to set. They are yummy and healthy, and by using natural ingredients they are also dairy-free, sugar-free, and flour-free. A win-win situation!
