Making Pecan And Apple Protein Balls

Prep Time: 15 minutes

Total Time: 1 hour, 15 minutes

Yield: 16 Balls

Serving Size: Bite-sized

  • 1 cup of chopped pecans
  • 1 cup of dried apple slices
  • 1 cup of dried dates - soaked in water for ten minutes and drained
  • Half a cup of chocolate chips
  • Half a cup of rolled oats
  • Good shake of cinnamon and mixed spices
  • Quarter cup of honey
  • 1 tbsp of mixed peel
  • 1 tsp of vanilla extract

  1. Soak the dates in warm water for ten minutes while you get out the remaining ingredients
  2. Prepare a tray to go in the fridge by placing a sheet of baking paper on it
  3. Slowly add all the ingredients into a food processor, ensuring the apple is chopped and no large pieces of nuts or dates remain. Alternate between adding wet and dry ingredients until you have a usable consistency to roll
  4. If mixture is too wet add some more oats, and if too wet add some small amounts of water
  5. Roll the mixture into balls approximately one inch (3cm) across and place them on the baking sheet
  6. Put the tray into the fridge and leave to set for one to two hours
  7. Place the balls into an airtight container and keep them in the fridge or freezer.
