If you love your red wine, and enjoy using it in your recipes such as this venison dish, you are going to love this video by the famed Gordon Ramsay – no ‘F’ words, we promise!
In this really short but effective vid, Gordon demonstrates how to cook Venison With Red Wine Chocolate Sauce to perfection.
It takes about 50 minutes to prepare in total, so you might need to watch the two-minute video a few times with your finger on the ‘pause’ button as we did, so you can follow along. And have a notepad and pen handy to jot down the specifics.

In a nutshell:
- he seals four small venison fillets in the frypan, wraps them in butter wrappers (to stop them drying out) and pops them into a hot oven for eight minutes.
- he makes the sauce in the frypan, adding the red wine and chicken stock which is reduced, and then includes the chocolate.
- the finished sauce is then poured over the unwrapped venison – and you are good to go.
We loved how he cooked the venison, which being a lean cut of meat like beef can be a little tough if cooked incorrectly.
Being a rich, earthy meat, we tend to be a little choosy when pairing red wine with venison. And while Gordon does not specify which wine he used, we find that wines like Pinot Noir, Grenache and Shiraz/Syrah, go particularly well with it.
And the wine and chocolate sauce poured over the meat is just delicious.

4 venison fillets (150 g each)
1 knob butter
300 g smoked bacon lardons
4 garlic cloves
250 g shallots
2 sprigs fresh thyme
2 bay leaves
2 tsp black peppercorns
350 ml red wine
1 litre brown chicken stock
40 g bitter chocolate
2 tsp raspberry vinegar
salt and freshly ground black pepper
4 used butter wrappers or tin foil
