Making Yummy Fruit And Nut Muffins From A Plain ALDI Cake Mix

How do you take a plain ALDI vanilla cake mix and turn it into something yummy, but different? And can you do it all with ingredients from your local ALDI store? This was the challenge we set ourselves this week, so keep reading to see the details.

We love our healthy recipes, and always enjoy looking in the pantry to see what we can make for our family that will be yummy and nutritious.

Recently we write a post titled, ‘How To Make Healthy Apricot And Nut Protein Balls In 3 Easy Steps‘ and they were a huge hit with the little ones in our family, and with those who took our recipe and made it themselves.

And today we found a plain ALDI ‘White Mill’ brand cake mix in the cupboard that we had bought some time ago when they first opened here in South Australia.

It was just a cheap vanilla cake mix typical of the sort we often buy to include in other recipes.

Upon finding the cake mix, we began to wonder whether we could visit our local ALDI store again, and buy a few other ingredients and turn this plain vanilla cake mix into something totally different and yummy.

So, with bag in hand we popped to ALDI and bought a selection of pecan nuts, dried fruit, chia seeds, cacao nibs, vegetable oil, honey and eggs, and dashed home to see what we could make.

The end result were a dozen fruit and nut muffins which were moist, chewy and very yummy indeed.

Making Yummy Fruit And Nut Muffins From A Plain ALDI Cake Mix

Prep Time: 15 minutes

Cook Time: 30 minutes

Total Time: 45 minutes

Serving Size: Individual adult-sized

Ingredients

  • 1 ALDI White Mill Vanilla Cake Mix
  • Half a cup of chopped pecans (we just put the whole nuts into a plastic bag and bash it with a kitchen steak hammer to break them up)
  • Half a cup of dried mixed fruit
  • Half a cup of cacao nibs
  • Half a cup of honey
  • Quarter cup of canola oil
  • 2 large eggs
  • 1 tbsp of chia seeds

Instructions

  1. Grease or spray 12 medium sized muffin tray cups to prevent the mixture sticking to the pans
  2. Preheat the oven to 180C (356F)
  3. Add all the ingredients to a large mixing bowl and use a wooden or suitable spoon to mix them all together
  4. You are looking for a mixture which is similar to that of a cake mix when it goes in the oven. If it is too dry add a tbsp or two of water, and if too dry add some more nuts or seeds
  5. Spoon the mixture evenly into the 12 cups so that each cup is no more than half-full
  6. Place the muffin tray/s into the oven and cook for 20-30 minutes rotating once
  7. Remove when cooked to a golden brown and plays muffin tray/s on a wire tray to cool. The tray/s can then be inverted and the individual muffins removed and eaten, or placed in an airtight container in the fridge.

Notes

1. We were advised by our local ALDI store that they do not sell paper patty cases to go into the muffin pans. This seems quite silly when they have a full section dedicated to baking and cooking! 2. Cooking times may vary depending upon your oven. Ours is cooler than our daughter's and always takes longer to cook than hers. 3. The muffins may collapse a little on top - this is normal because of the heavy ingredients added. It does not detract from the taste. The secret is not overdoing it. Too much fruit or nuts and they will collapse and look more like doughnuts (if that happens - just fill them with Nutella, lol).
